Aethos Saragano is a modern boutique resort. But in person, the property feels suspended in time. Perhaps it’s because the rooms of this restored village turned resort are built into centuries-old walls, or maybe it’s the untouched natural surroundings that blur any connection to the here and now. Whatever the reason, staying here is like living here. You step into the village and surrounding nature, instinctively observing everything happening between the shared spaces and the private suites. Join Paolo and Kat on this unique culinary retreat that takes you out of time, into the woods, at peace in Italy's green heart.

The Seasonal Table -

Forage in the woods for lunch

Learn how to recognize mushrooms and herbs that grow in our woods, followed by preparing and eating the fruits of your labour. Join chef Delfina Vincareti and fellow forager Paul on a serene stroll through the fields and forest to learn how to identify and gather what the rich "terra" of Umbria has to offer - wild vegetables, greens, fruits, wild herbs or mushrooms. After the foraging, you will prepare together with Delfina & Paul and then eat a light lunch of ingredients.

Secrets of the Umbrian Kitchen

Hand-rolled pasta and local pours, just footsteps from your suite. Learn the secrets of the Umbrian kitchen, then settle in for a long lunch with wine and something sweet to finish. You’ll learn the art of the region — from the perfect pizza dough to the hand-rolled strangozzi pasta, all using ingredients harvested at their seasonal peak.

Wine Tour with Horse Riding

A slow, guided ride through the estate's native woods, olive groves, and rolling hills to see the terroir firsthand. Once we're off the trail, we’ll head straight to the cellar to taste the finished product. A different way to experience the wine country.

Wellness Retreat

With a view out to the countryside, revel in the restorative power of stillness and tranquillity at the resort's spa with massage services, as well as the outdoor pool.

Day trips:

Perugia is For (Chocolate) Lovers

Get your chocolate fix with a tour of the Perugina chocolate factory , on the outskirts of the city of Perugia. At the Casa del Cioccolato, we will learn how a cocoa bean is transformed into the romantic hazelnut and chocolate Baci bonbons. You will also learn of the feminist history of Italy’s most famous chocolatier.

Montefalco: Umbria's Balcony

This quaint medieval town of Montefalco perched on a hilltop boasts some of the most magnificent views over the undulating hills, vineyards and olive groves that makes this destination one of most desired in Umbria. Montefalco is one of the few Italian towns where wine production was practiced even inside the city walls. As you meander through the quaint medieval alleys and courtyards you come across the occasional Sagrantino vine that is planted just by the entrance to someone’s house or on their veranda.

Orvieto: The Best of Umbria

Orvieto is one of the most striking, memorable, and enjoyable hill towns in central Italy. It sits majestically high above the valley floor atop a big chunk of tufo volcanic stone (tuff), overlooking cypress-dotted Umbrian plains. A visit here will reward you with a delightful, perfectly preserved, and virtually traffic-free world highlighted by a colorful-inside-and-out cathedral and some of Italy's best wine.
